FOR THE MANGO CHICKEN: 1 1/2 tablespoons of avocado oil or olive oil 1 pound chicken breast, trimmed 1/4 teaspoon turmeric 1/4 teaspoon of garlic powder 1/4 teaspoon cayenne 1 large ripe mango, cut into 1-in. chunks 2 tablespoons of lime juice 1/2 of a red onion, thinly sliced (about 1 cup) salt and pepper to taste
FOR THE WRAPS: romaine lettuce for wraps 1 cup of carrots, thinly sliced 1 large zucchini, thinly sliced and cut into ~3 inch pieces optional for topping: cilantro, extra slices of fresh (uncooked) mango, lime juice in a large skillet, heat the oil over medium heat. Add in the chicken and top with the turmeric, garlic powder, and cayenne. Cook until the chicken is done on the outside and just beginning to brown . Add in the mango chunks, onion, and lime juice and stir together. Cook for an additional 5 minutes or until chicken is cooked all the way through. When done, take the chicken off of the heat and set aside. Once cooled, cut the chicken into slices. To assemble the wraps, top your lettuce wraps with the carrots and zucchini and then top with the mango chicken mixture. optional: top with a bit of cilantro, extra mango, and lime juice. .

Chef Richard “Ricky” Lagoc Butay
has over 20 years of experience in the culinary industry. He was born and raised on the westside of Kauai and is
a proud graduate of Waimea High School. He attended Western Culinary Institute in Portland, Oregon where he was classically trained in French Cuisine.
Chef Ricky has worked alongside world renowned chefs such as, Roy Yamaguchi, Russell Siu, and Mark Oyama. In 2006, he was voted “People’s Choice” at the Taste of Hawaii while he was the Sous Chef at Kauai Pasta Kapaa.
Chef Ricky’s mission is to provide Epic Eats one bite at a time, by infusing French cuisine with a local flare. His vision is to give back to the community he loves so much by using local vendors and products.
Chef Ricky helped pioneer the Salvation Army Hanapepe Corp’s Soup Kitchen. He is also an active member and leader of New Hope Lihue and cooks for community organizations and events.
Chef Ricky lives in Kapaa with his wife, Puna, and their five children, Keyrsten, Kaya, Lipai, Līhau, and Rhicky. He would like to thank God, his family, and friends for their love, support, and encouragement over the years. Mahalo! .

Who would've thought that I'd be able to enjoy 2 of the best dishes I've ever had in the same day.
Simple pork noodle soup on Jeju City, peppery, and silky soup, noodles with the perfect amount of bite, and tender slices of pork for lunch 😊
Seogwipo Maeil Olle Market, like many of the other outdoor markets in Korea, this one showcased their local speciality in abundance - oranges at pretty much every stall 3rd stall, with the other 2 stalls selling seafood or pork. It snore lively in the afternoon, they were just setting up when I went in the morning.
Back to Seoul, checked out a local shopping / food stall area nearby in Myeongdong, tried some seared octopus which was delicious and not too chewy like some others I've tried this trip. Then with great fortune I found a small restaurant tucked away in what I would call an alley(probably 1.5m wide) and ate the absolute best bibimbap I've ever had... EVER!! Beef tartar bibimbap, beef was so tender, melted in the mouth, mixed it all up and pressed the rice against the side of the stone bowl to make some crispy rice... Heavenly... I'd strongly recommend checking it out.

“how do I avoid feeling bloated on vacation?” •honestly I listen to what my body craves whether it’s alll the indulgences (salt lake city) or being drawn more to veggies (this trip). every restaurants we’ve gone to in siesta has had amazing vegetarian friendly options that combine healthy with savory and ive eaten dessert every night, most of which i’ve shared on my stories! •some clients i’ve worked with have struggled to find this balance and while I don’t have all the answers, for beginners i would suggest only stocking your fridge with produce and protein to save the indulgences for when you go out to dinner! •my swole face has gone down a little and i napped for 2 hrs so feeling refreshed. our last night here is gonna be all about the pasta 🍝 before another early flight tomorrow.❤️
