  • Last of the Summer Fruit Pavlova Slab, adapted from @welldonefood 's Puff Pastry Summer Slab Pie. The Pavlova recipe is from @allrecipes. I realize we're one day into autumn and this seems out of place, but when I saw the original recipe of marzipan, marscapone whipped cream, I was thrilled I had some of the last of the local nectarines to glam out in my last farewell to summer. Not having enough puff pastry to keep to the original recipe from @welldonefood, I decided to turn this into a pavlova slab. My pavlova crumbled at the side a bit and isn't that photogenic, but it tasted beautiful with the fruit, marzipan cream, drizzled honey, lemon zest and mint. A perfect dessert that isn't cloyingly sweet nor heavy; it was even met with delighted approval from the finicky husband. I can't tell you how tasty this is & I'm not a marzipan lover. My journey with making desserts started daily after work, after sitting in angry Toronto traffic on the parking lot we call the Don Valley Parkway, after dealing with people and their problems . I wanted to save the world, though I knew I couldn't. So, I would go home and after cooking dinner and listening to my husband's millionth story of this or that, I would steal time well into midnight and 1 am, reading baking books, bookmarking recipes, making notes. If I couldn't help each person who sought my assistance, I could bake something; a tangible reminder that in this fragile life, magic is a whisk and bowl away. It's the age old story of finding reassurance in the rules of chemistry, the yield and reward of (mostly) unmitigated control. I no longer bake at midnight, driving my neighbours to drink from hearing the Kitchenaid at full speed. I still love to make desserts, but it's more of a leisurely pleasure than a mad effort to find calm. The more calm I get the less cake I need. But this one you have to try, whether you're a spaz or The Fonz.
