  • This is probably the best ramen I’ve ever made, hands down. It’s really easy too. FYI - this is my version of ramen. There’s no fresh veggies on top because I actually hate having raw or semi raw or large chunks of veg of any sort in soup... it’s just not my jam 😂 So it’s basically noodles, broth, and small pieces of veggies. It’s all gluten free and vegan (obviously, haha) and made in under 20 minutes. I didn’t write down the recipe, but I have a ~rough~ idea of what I did, so here it is: . . Ingredients: 1 leek, sliced up 4 cremini mushrooms, diced 3 cloves of garlic, minced 1 tbsp ginger, grated 6 cups of vegetable broth 1 tbsp organic refined coconut oil 1 tbsp miso paste 2 tbsp tamari a pinch of black pepper Ramen noodles (I use lotus foods vegan/gf/organic noodles) *the broth makes 4 portions, so if you plan on making 4 portions make 4 ramen cakes* . . Directions: 1. In a large stock pot, sauté the leek and mushrooms in coconut oil. Once translucent, add the garlic, ginger, black pepper and let it cook for another minute. 2. Deglaze the pan with the tamari, add the vegetable broth and miso paste and bring it to a boil. Give it a good stir to make sure the miso dissolves. 3. Let it boil for 10-15 minutes until the leeks are super soft (they’ll melt like butter in your mouth, it’s amazing) and then prepare the ramen noodles separately according to their package instructions. 4. Once the ramen noodles are done, I like to pour a bowl of broth and then add the noodles to the bowl. I only cook as much of the noodles as I want at the time. For example, I had this for lunch the next day, so I prepared fresh noodles that day. The noodles only take 4 minutes to prepare so I like to just make them as I need them so I have maximum freshness! This somehow reminds me of the flavour of chicken noodle soup. I think the miso, mushrooms and tamari add a really nice umami to it! I will definitely be making it again, sooo good.

  • I've been sprinkling dukkah over the top of just about everything lately 😍 and it always seems to work so well! Like my lunch today, this plate filled with leftover #roastedpumpkin (homegrown by family who live outside the city 🏞️ #queenslandblue variety, aka the dream pumpkin for roasting), crispy #potatowedges and heaps of yummy #roastedchickpeas, with @mayversfood #tahini and @basbaas_australia #chillisauce on the side... and... #dukkah! Yum.
