As a mother of two young girls I am always questioning if I am doing the right thing. I work most days of the week, study part time to try and create the best opportunities for my children. At the same time, I am distracted and always on the go, perhaps not giving my kids the time and energy they need. I always believed it was a good thing for my children to see their mother be a hard worker and contribute to society but with technological advances, the boundary between home life and work life is quickly diminishing. Pumpkin chorizo mac n cheese 🧀 🎃 😋 Recipe below. Makes 8. 👇👇 Ingredients
4 cups cubed pumpkin
1 cup low sodium broth (vegetable or chicken)
1 cup milk of choice
1 packet pasta of your choice (I used @sanremopasta red lentil spirals)
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
3/4 cup shredded cheese
2 links chorizo, chopped up in the food processor (or you could substitute chopped bacon 🥓) Method
In a frypan, cook the chorizo. Set aside. Cook pasta according to packet directions. In a large saucepan, place the broth, milk and pumpkin and bring to a boil. Cover and cook until pumpkin is tender. Remove from heat and put the pumpkin and liquid into a food processor. Add garlic powder, onion powder and salt. Blend until smooth. Place pumpkin purée back into the large saucepan on low heat. Add pasta, chorizo and shredded cheese. Stir to combine.
